The parameters that separate them are rehydration behaviour, bulk density, flake size and the level of free starch.
Bulk density is the one that surprises first-time buyers. Flakes are light and bulky, so a container cubes out well before it weighs out. If you are costing a landed price on tonnage alone, the freight line will be wrong. Tell us the pack you want and we will tell you what actually stows.
Moisture governs shelf life and caking. Write a maximum on the purchase order rather than accepting a marketing figure, and we will read the lot's COA against it before anything loads.

FAQ
What rehydration behaviour should I ask for?
It depends on the application, so we would rather you tell us the end product than quote a number cold. Instant mash, soup bases and snack applications sit in different places. Send the behaviour you need and we will confirm what a partner can actually achieve.
Do potato flakes cube out or weigh out in a container?
They cube out, comfortably. Flakes are light and bulky, so the box fills before it reaches payload. Quote on pack and volume, not tonnage alone, or the freight cost in your landed price will be wrong.
What moisture level is normal?
Buyers typically write a maximum on the PO and the lot's COA reports the actual result. We do not publish a marketing percentage, because the figure that matters is the one on the certificate for your shipment.
Can you supply granules as well as flakes?
Yes, and they are different products commercially. Granules are denser and stow differently. If you are unsure which suits your line, describe the process step and we will advise rather than guess.
Is there a minimum order?
It depends on the cut and pack, because those decide what fills a container. Small trial quantities are possible. Tell us the volume you actually need and we will tell you whether it is a part load or a full box.
